Greek Beet Salad

Not only is this salad delicious, its nutrtional value is hard to beat). Beets are rich in betaine, manganese, fiber, folate, and antioxidants. For maximum nutritional benefit, eat the greens too.

Ingredients:

  • Beets, with beet greens
  • Garlic
  • Olive oil
  • Sea Salt and Pepper

*Optional

  • Red Pepper Flakes
  • 1/2 orange plus additional juice

Directions:

Chop the beet greens. Peel and cut the beets into matchsticks.

Saute the greens with the garlic (and red pepper flakes if desired).

Remove the greens mixture from the pan, and saute beets until tender.

Drizzle with olive oil, and season with Sea salt and pepper. (Squeeze half an orange over the top if  you’d like.)
